Weekends are my weakness when it comes to sweets. I usually go for cookies or bars of some sort because I can always count on having the ingredients on hand.
These Oatmeal Chocolate Chip Cookie Bars are a regular, sweet-tooth-satisfying weekend treat at our house!. Chewy, chocolate and oat goodness in every single bite!
How to make Oatmeal Chocolate Chip Cookie Bars:
Beat butter and sugars: In a large mixing bowl beat together the butter, brown sugar, and white sugar until smooth and light.
Add eggs: one at a time, mixing after each addition. Add the vanilla.
Mix dry ingredients: In a separate bowl combine the dry ingredients: salt, baking soda, baking powder, flour, rolled oats, and 1 cup chocolate chips.
Combine: Add dry ingredients to the butter mixture and stir until combined. Add chocolate chips.

Press into greased pan.

Bake for 25 to 30 minutes or until golden brown. Allow to cool completely before cutting.

Storing and Freezing Instructions:
Storing instructions: Store covered at room temperature for 5 days or store in the fridge for 7-10 days.
Freezing Instructions: For best results, allow pan to cool completely. If you used parchment under the bars, lift the cooled bars out of the pan. Wrap the whole bar brick in plastic wrap and then aluminum foil. Freeze for up to one month. Thaw completely in the fridge before cutting into bars.

Oatmeal Chocolate Chip Cookie Bars
Ingredients
- 1 cup butter , room temperature
- 1 cup light brown sugar , packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 cups all-purpose flour
- 2 cups old-fashioned rolled oats
- 2 cups chocolate chips semi-sweet, milk chocolate, or a little of both!
Instructions
- Preheat oven to 350 degrees F. Lightly grease a 9 x 13 inch pan with cooking spray or line with parchment paper.
- In a large mixing bowl beat together the butter, brown sugar, and white sugar until smooth and light.
- Add the eggs one at a time, mixing after each addition. Add the vanilla.
- In a separate bowl combine the dry ingredients: salt, baking soda, baking powder, flour and rolled oats.
- Add dry ingredients to the creamed mixture and stir until combined. Stir in chocolate chips.
- Press into prepared pan and bake for 25 to 30 minutes or until golden brown. Allow to cool completely before cutting.

I have now made this recipe twice, and twice, it’s not come out very good. I wanted to prove it wasn’t my own fault which is why I made it again. You know, before the internet, when I used old fashioned cookbooks, i rarely had a recipe turn out wrong. But now, relying on internet recipes, I’d say around 40% of the time it isn’t quite right. I put that down to the person who posts the recipe not being accurate in their instructions, or being too vague. Or trolling. Ha ha, I gotcha. I gave you wrong info and your whole recipe got ruined. Because this recipe needs to bake for 45 minutes minimum, and even when you put foil on top, the top of the bars gets very brown. Also, when you put foil on, the chocolate chips you put on the top stick to the foil. I will not make this one again. In fact I plan to switch back to old fashioned cookbooks. Because you can rely on them. Not online recipes written by clowns.
I’m sorry they didn’t work out for you. Whenever you put foil over baked goods, it’s always a good idea to “tent” it, so it doesn’t get stuck to the top of anything. Also, I wonder if your oven is calibrated to the right temperature? And were you using a metal pan (not glass). Metal will conduct heat better, and the bars shouldn’t take 45 minutes to cook.
The great thing about blogs (rather than cookbooks), is you have access to reader reviews, you can contact the author for help, and there’s usually a much more detailed recipe, step-by-step photos, and a full video tutorial to help guide you.
These are some of my favorite bars of all time. And so easy to make. I bake mine for 27 minutes. Definitely be sure to let them cool if you plan on taking them anywhere or else they won’t be set, but when it’s just me I love digging in right away.

Made these today and really enjoyed them. Made a half batch and at the 15 minute mark- I covered with foil and cooked an additional 10 minutes. I loved them. They would have been too dark if I wouldn’t have covered them. Yum! 😍 Came out great! Delish 🤤

Wonderful recipe. I also cut the recipe in half and baked them in a 9×9 metal pan for 23 minutes. The bars came out perfect.

These are delicious. I cut the recipe in half for my husband and I. The oatmeal makes the cookie so chewy and soft. Mixing of the chocolate chips adds a great flavor. Will definitely make again. I love bars because they are so easy.

I have made these so many times now!!! They are delicious!! I add a big spoonful of peanut butter when I mix the butter and sugars and it’s amazing! Definitely 100% recommend.
Do you think these would work if I subbed white chocolate morsels and added blueberries? I am always looking for new ways to use my favorite berry and this batter sounds awesome.
