This creamy Sun-dried Tomato Pasta recipe has penne noodles, spinach, and fresh basil tossed in a flavorful sauce. Perfect for a busy weeknight since it only takes 20 minutes!
I’m adding this Sun Dried Tomato Pasta to my list of amazing one-pot dinners. It’s fast, fresh and flavorful and my whole family loves it! This is a meal we enjoy all year round!
How to make Sun-dried Tomato Pasta:
Cook pasta. Drain and rinse with cold water to keep noodles from sticking together.
Saute sun-dried tomatoes in a little bit of oil from the bottle for 1-2 minutes.
Add butter to the pan. Once melted, stir in flour, stirring well for 1-2 minutes until golden. Add spices: dried basil, garlic powder, Italian seasoning, parsley, and red pepper flakes. Taste and add salt, pepper, and additional spices as needed.
Stir in broth and milk and cook for several minutes, until sauce is slightly thickened. Stir in parmesan cheese then spinach.
Combine cooked pasta with sauce and toss. Serve in bowls with fresh chopped basil, and an extra sprinkle of parmesan cheese, if desired.
Recipe Variations:
- Add Meat: Try adding grilled chicken, shrimp, or sausage.
- Add Veggies: Sautéed asparagus, zucchini, yellow squash, bell pepper, or broccolini would be delicious!
- Pasta: Any type of bite size pasta may be substituted.

Sun-dried Tomato Pasta
Ingredients
- 1 lb penne pasta
- 4 cloves garlic
- ½ cup sun-dried tomatoes packed in oil
- 4 tablespoons butter
- 1/4 cup flour
- 1/2 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried parsley flakes
- ¼-1/2 teaspoon crushed red pepper flakes , or more, to taste
- 1 1/4 cups chicken or vegetable broth
- 2 cups milk (not skim)
- Salt and pepper , to taste
- 1 heaping cup freshly grated parmesan cheese , plus more for garnish
- 2.5 ounces baby spinach leaves
- 1/3 cup fresh chopped basil
Instructions
- Cook pasta according to package instructions. Drain and rinse with cold water to help keep noodles from sticking together. Set aside.
- Heat a skillet over medium heat. Use a little bit of the oil from the sun-dried tomatoes to sauté them for 1-2 minutes. Add garlic and sauté 30 seconds more.
- Push to the side and add butter to the pan. Whisk in flour, stirring well for 1-2 minutes until golden (careful not to burn it). Add spices: dried basil, garlic powder, Italian seasoning, parsley, and red pepper flakes. Taste and add salt, pepper, and additional spices as needed.
- Gradually whisk in broth and milk, and cook for several minutes, until sauce slightly thickens. Stir in parmesan cheese. Stir in spinach.
- Add cooked pasta and toss to coat. Divide into bowls. Garnish with fresh chopped basil, and an extra sprinkle of parmesan cheese, if desired.

perfection! did not have spinach so I used asparagus, sauteed them slightly prior to adding them to the sauce.
I’m not sure why this is called a one pot dinner. I used one pot to cook the pasta and then another skillet to make the sauce. It certainly took me a lot more than 20 minutes to make. I think a little guidance on salt and pepper would help. Also I think you should mention to dice up the garlic. It was good though!
Follow the basic recipe as written and you will have a delicious pasta dish. I added sauteed vegetables that we like. You need to have everyone ready to eat once you start. Only reason I did not give it a 5 star is the amount of clean up
I would also like to note that I used oat milk and it was still amazing!!!

Tasty. I wish I would’ve made a little less pasta to make it perfect! It was good though!
