These healthy and Spicy Chicken Lettuce Wraps are filled with a chicken mixture of cucumbers, carrots, bell peppers, green onions, cilantro, and cashews.
Let’s face it, whether it’s an official New Year’s Resolution or not, eating healthy food is something most people strive to do this time of year. If you’re like me, you’re so burned out of holiday junk food and sweets that it’s refreshing to eat something healthy and fresh!
Last year around this time I posted these delicious Thai Chicken Lettuce Wraps (my number one most popular post this year!) so I wanted to share a fun variation of them this year! These Spicy Chicken Lettuce Wraps really hit the spot!
What is the best lettuce to use for lettuce wraps?
You can use any type of green leafy lettuce for lettuce wraps, but popular types of lettuce include Boston bib lettuce and romaine hearts. The great thing about lettuce wraps is that they are easily modifiable when it comes to the filling and the wrapping. Cabbage leaves would also be a yummy substitute.

A perfect summer evening meal! We enjoyed the balance of fresh crunchy veggies and the sweet chili dressing.
My whole family loved this! Definitely a keeper
My new favorite lettuce wrap recipe!!
Omg….this is fantastic! Just made for dinner! I didn’t use any cashews because my hubby doesn’t like nuts & I used Soy Vay sweet & spicy instead of Sriracha. Was still a great recipe!
Thanks Sylvia! Happy you liked it!
These look so delicious – but my first thought was, Oh My God – I have that platter. Actually, I have two with that design – one smaller than the other. I got those when I was first married – more than 40 years ago – and I still love them. I’ve seen that design more than once in photo spreads!! I’m pinning this recipe as well as several others – YUMMY!
Haha Love it! Thanks Cecile!
Hi Lauren,
We are going to love these. I’m making a special dinner for our family Sat. night……..so glad I saw your wraps and I can’t wait to share them with my family.
Yum! We had these for dinner tonight, and they were sooo flavorful. I love the use of some atypical lettuce wrap veggies. We subbed maple syrup for the brown sugar, and the sauce turned out great.
These look fantastic. And something a little healthier after the holidays is a great idea. Thanks for sharing!
Those look great! Adding them to my dinner menu right now!
