An easy microwave Vanilla Mug Cake (made without eggs) that’s the fastest way to make dessert for one or two. Enjoy it plain, add nutella, or stir in a handful of chocolate chips and you’re on your way to dessert bliss.

Vanilla Mug Cake

Some people may think I’m exaggerating when I say that Mug Cakes changed my life, but seriously, we’re talking about a personalized serving of delicious cake, made in just about 5 minutes!

If you think it’s too good to be true then I challenge you to give it a try! And, if chocolate is more your thing, then try my chocolate mug cake instead! If you love cake and baked goods like I do then I’m telling you, your sweet tooth cravings have met their match!

Here’s what you’ll need to make vanilla mug cake:

  • all-purpose flour: cake flour also works.
  • white sugar
  • baking powder
  • dash salt
  • butter
  • milk: any kind will work. 
  • vanilla
  • sprinkles

Vanilla Mug Cake in 3 Easy Steps:

  1. Add the dry ingredients to a microwave safe mug; flour, sugar, baking powder, and salt.
  2. Stir in the wet ingredients: milk, melted butter, and vanilla. Add sprinkles, if desired.
  3. Microwave for 70-90 seconds.

For healthier mug cake, make these swaps:

  • Milk: substitute skim milk
  • Sugar: Cut the amount in half, or substitute an artificial sugar sweetener or honey.  You could also leave out the sprinkles.
  • Butter: replace with applesauce, or coconut oil
  • Flour: use white whole wheat flour

Can you make mug cakes dairy free?

You bet! For dairy free mug cake, substitute almond or soy milk and use dairy-free butter or coconut oil.

  • Add flour, sugar, baking powder, and salt to a mug and stir together.
  • Stir in milk, melted butter, and vanilla extract until smooth, being sure to scrape the bottom of the mug. Stir in sprinkles.
  • Cook in microwave for 70-90 seconds* (until cake is just set, but still barely shiny on top). Allow to rest in microwave for 1 minute before consuming.

Notes

*Because all microwaves are different, it's difficult to give a precise cook time. Start with 70 seconds, wait 1 minute while it cools, then look to see if it is set. Add an additional 15-25 seconds if needed. Allow it to rest in the microwave for 1 minute.
• The trick with mug cakes is to stop cooking the cake earlier than you think, because you want it to be soft on the inside, and the cake will also continue to cook as it cools.

    I’ve tried a few mug cake recipes now, and this is the closest I’ve found to a cakey textures. It’s beautiful!
    I didn’t have any vanilla or sprinkles, so I omitted those. Instead I added a sprinkle of ginger and mixed spice, and added chopped chunks of crystallised ginger.
    It’s amazing. I can’t wait to try other flavour combinations!

    Delicious. Add ins of 1 Tbsp peanut butter with the melted butter and wet ingredients.
    Once mixed added 1 Tbsp of chocolate chips.
    Baked 80 secs in a large mug in my 1200 watt microwave. Let sit inside microwave 1 min.

    Yikes. All I tasted was raw flour.. We’ve done this with cocoa and at least that covered the flour taste, vanilla can’t pull that weight. Awful.

    This recipe was the BOMB!!! I followed the recipe as written but also added a splash of Almond extract. It smelled so good while it was cooking. I waited for 2 mins after it was done. Probably should have waited longer because it was still a bit hot but so moist and very delicious was tempted to make another one…but controlled my urge. This is definitely a keeper.

    Very tasty and easy! Super convenient for someone without a lot of ingredients in my home. 😊 Though it was a bit dry, but that’s happened with another mug cake I made. This time I didn’t have any Reddi Whip to moisten it. Regardless, it hit the spot! I was craving something sweet so I gave it a try, but I used whole wheat flour, 1and a pinch tbsp coconut sugar, 1tbsp olive oil (because I am out of coconut oil), 4 (instead of 3 because of the whole wheat flour) tbsp unsweetened coconut milk, and added a pinch of nutmeg, cinnamon, coconut flakes, and added 20 secs onto the time, and…it is sooo good lol! I will use this again for sure! Thanks again!

      I forgot to give this little mug cake a rating and I couldn’t not leave one since it was actually pretty good, even with all of my substitutes, and I just tossed everything into my mug in the order it was listed and mixed it with a fork because I got a bit excited and it was sooo good and light and fluffy hahahaha!!!

    A great base to customise your own mug cake.

    I made a few changes for my preference. I cut down the sugar to
    1 Tbsp (used light brown sugar) and to compensate I added 1/2 tsp of vanilla extract (making it 1 tsp in total) and 1/4 tsp of almond extract with a dash of nutmeg. I also used salted butter instead of plain.

    I did 90 seconds, gave it a light touch and then did another 30 seconds (I have a microwave fan oven) and let it cool.

    Taste wonderful, moist, and no frosting needed. Quelled my cake craving perfectly.

    I made these tonight. My husband had the sprinkles topped with whipped cream. I added cinnamon to mine and topped with whipped cream and cinnamon chips. Very easy and very tasty. Definitely satisfied our cake craving. We will absolutely be making these again!

    awful. just awful. i came home after a long day and thought “yknow what? im gonna treat myself to a nice dessert!” i spend so much time making and it comes out awful. it feels and tastes like 3 day old playdough and clumps up into awful balls of death. ive never had a worse cake in my life, and despite its dry nature it was imposible to scrape of my mug. please, dont make this

    So good and adaptable, I’ve used this recipe as a base to much a bunch of different cakes and it works every time! The only thing i would say is to only use one or 1.5 tbs butter, i found 2 to be too much

      So I followed the steps and I put it in the microwave fire 90 seconds and after 60 seconds it overflowed my microwave so much. So when it went back to normal. I put it back for 30 more and then 30 more until I gave up. After that there was barely any cake: 0. I ended up adding mint chocolate chip ice cream and it was terrible

    I needed something easy to satisfy my sweet tooth but my oven wasn’t working. Found this. made it for me and the kids but forgot the sugar (was surprisingly still good) but I wanted to try it correctly so I made it again with the sugar, this time adding 1/4 tsp of cinnamon (my fave spice) and it was a hit!     The best cake I’ve ever tasted.
    Used 2 teaspoons of sugar.
    3 teaspoons of cadbury drinking chocolate.
    Used as a playdate activity and the kids had a ball.
    1 min in 1100 watt microwave with 1 minute to rest in microwave.

    Love the fact it can be eaten asap….and warm.

    Really astounded at how well this worked – I thought for sure the texture would be odd without any egg, but it was perfect.
    I did have some slightly undercooked bits at the bottom of the mug, so I may have needed to microwave it a touch longer than I did, but overall, it was fantastic. Great recipe!

    It was probably partly my fault, because I used the recommendations for substitutions. I used honey instead of sugar, and oatmilk instead of cow milk. The result was a mushy and way-too-moist. Again maybe it’s because of the substitutions I used😂

    This is an amazing recipe, I was shocked! I did the 3x portion, used a tablespoon of vanilla instead of a teaspoon, and left the sprinkles out. I swirled apricot preserves into the batter and the fruit sank to the bottom while baking, giving it an upside down cake quality. I set the microwave for 3.5 minutes. This lil cake is phenomenal 😋

It’s also very versatile since it’s vanilla. I swapped the vanilla extract for pandan extract and used coconut milk and it was a delightful flavor explosion.     It was the best vanilla mug cake I’ve tried and I’ve tried a lot! I liked it because it wasn’t super sweet like so many mug cakes are. Instead of the sprinkles I used a few semisweet chocolate chips sprinkled on top. Cooked it for 70 min and it was perfect. Definitely will make it again.

    This was very good. I think I may have over-cooked it slightly at 70 seconds but it was still quite tasty. I added a handful of semi-sweet chocolate chips instead of sprinkles, as I don’t have them, and subbed half of the vanilla with butterscotch, because we both love butterscotch… Next time I’ll do just 60 seconds, but this recipe is the lightest, fluffiest mug cake I’ve had so far. Will make again, for sure.

    I followed your recipe as a base bjt altered it slightly by using a 1:1 ratio gluten free flour blend and adding a crushed oreo as a mix in. The recipe was very easy to make and it only took me a few moments. I only needed 70 seconds on my microwave, it came out perfect.     This recipe got me through college when I wanted something sweet but it was too late to go to the store. It works really well even if you don’t have milk or butter. I’ve substituted soy milk and water for the milk and oil for the butter and it still turns out good. It’s moist but tender and it’s the best mug cake I’ve tried.

    I LOVE this recipe. I made it vegan by using soy milk and plant-based margarine (I just didn’t happen to have any) and it was still bomb. So fast and easy when you want something in a pinch and don’t want to have to rummage through a kitchen of tools and way too many cake leftovers.

    This is the recipe that introduced me to mug cakes several years back! I’ve tried many different ones over the years, but this one is always my go-to. ❤️ My family loves it as well!

    As long as you’re sure to scrape the bottom of the mug when mixing to avoid clumps of flour, the texture is great! Reminds me of a light spongey pancake. Definitely better than you’d expect from a cake made in the microwave.

    Only downside is the flavor can be a bit bland, but considering it’s made in a microwave in seconds, it’s still fantastic when a craving hits. It makes a great base if you prefer something more flavorful—I like subbing liquid flavored coffee creamer for half of the milk! I also opt for extra vanilla extract or even a dash of almond extract. When I have the time and energy, it pairs nicely with a quick homemade glaze or icing, or even a scoop of ice cream on top!

    This recipe saved me today. My plan for birthday cupcakes for 3 fell through at the last minute. Luckily I found this recipe. I chose this one because a couple others I found used oil, but I liked the idea of butter better since that’s what I use in my full-size cakes. It was my first time making mug cakes and they turned out really well. I topped them with homemade chocolate buttercream and rainbow sprinkles. They were very moist and the cake was not overly sweet which was a nice complement to the buttercream. We enjoyed them. The only thing I did differently from the instructions was I put one beater in my hand mixer and used that to mix right in the mug after I added the wet ingredients. I used it on low and was careful not to “over mix”. Oh, and I accidentally left the sprinkles out of the mix, but now I have something to look forward to for the next time.

  73. We made this just now but used self raising flour and didnt add baking powder. We used 6 choc buttons on top and did 90secs. Was what we expectedly- perfect for kids after dinner. If doing myself I’d probably make pancakes instead as I’m super fussy and it was a little like a stodgy cupcake. Flavour ok tho. 4/5 stars coz it’s easy and quick. Crushed Oreos and milk make a similar cake if microwaved.

    It didn’t work! Sadly another bad recipe. It looked like broiled dough. Tried it and it was undercooked! I put it on for 15 seconds more and it was overcooked! Wasted my ingredients. I followed all the instructions and the notes! I tasted it and I tasted like vinegar! Don’t recommend.

      I wonder if your baking power was expired? It can make the taste very gross and bitter, or even metallic. This would also cause issue with the texture and it would not rise properly. If you have the oppertu it, give it a shot again when you have a new tin of baking powder. I’ve made thus recipe quite a few times and it’s always really good!

      This recipe actually turned out…lousy. That really surprised me! It looks so good. It was rubbery and dense in texture after 70 seconds, then 90 seconds, then another final 30 seconds. It never baked properly. Disappointing 😞

    Quick and easy classic vanilla cake. I only used 1/4 teaspoon of vanilla extract but you can basically use that to taste. The stronger you want the vanilla flavor the more extract you would use or less extract for just a hint of vanilla flavor. Turns out about the size of the average cupcake, maybe a tad larger. No egg needed so you more than likely have all the ingredients for this just in the pantry.

    I’m not sure how these other people messed it up, it’s incredibly basic… Just follow the ingredients and simple measurements.

    This was pretty good. Easy recipe. I have a smaller microwave and used a thicker mug, so it took about 100-110 seconds vs 70-90 to get the just done on top look.

    Added a dash of cinnamon and measured sprinkles with my heart (prob a tablespoon vs teaspoon)

    Will definitely make again. And maybe add a glaze of powdered sugar and milk and poke the cake and pour over for an extra decadent cake. Though it isn’t needed.

  138. I don’t understand why this has so many poor reviews. I used to be a baker & truly enjoy this recipe! It’s great for when you have a hankering for cake but don’t want to have a whole cake of leftovers. I’d recommend sifting the flour & baking powder. Can substitute oil for butter. I also enjoy playing around with the recipe; swapping the vanilla for almond extract, swapping the milk for coconut cream, playing around with different add-ins, etc.

  163. I just tried this! The proportions are actually legit. I’ve tried some other cake in a mug recipes and this one may seem like it may have too much vanilla initially, But it was actually so good. The best amount of vanilla flavor by far that I’ve ever tried. I mixed all the wet ingredients and added them into my dry ingredients like I would a cake. And I used unsalted butter & melted the butter first. I added it to the cold milk so all the wet ingredients were likely room temp. I microwaved it for ~85 seconds. It seemed longer than it needed while it was in the microwave, but when it came out, I let it sit for another 30 seconds & it was SO light & fully cooked. Fluffy & delicious!

I didn’t add sprinkles because I am not a fan of them, I used plant milk and non-dairy butter, added a touch of cinnamon along with the vanilla, it is a sweet recipe so if that’s not something you’re looking for i’d suggest less sugar and then you can always sugar to taste afterwards with maybe some powdered sugar.

      I thought this cake was great..I love white cake and it’s actually a very hard thing to find…I used cake flour and really whisked the dry ingredients together well..then used real butter and half and half instead of milk because I didn’t have any…whisked it really good, microwaved for 70 seconds..in the meantime made a little homemade buttercream and drizzled it over the cake.     It wasn’t really good like i thought it would be. I put the exact measurements for all the ingredients (except for the flour) and used the same ingridients listed. The cake batter was actually really good it tasted exactly like cake batter but when it was done cooking, it tasted horrible and not like a cake AT ALL. I did add more flour to it at one point because it was super liquidy so maybe that’s where it went wrong. Im pretty disappointed.

    Loved this recipe!! I couldn’t decide on mix-ins, so I went a little overboard. Lol I added a few chocolate chips to the top of the batter, cooked it, then added a drizzle of chocolate syrup, half a sliced banana, and a sprinkle of cinnamon.   209. In my opinion this is not a real “in a mug” recipe because it requires you to melt the butter separately, which uses an additional recipient of some kind. That’s one dirty dish too many in my eyes, since I am the only dish washer here.

    1. I melted the butter in my mug, then mixed the rest in. Came out the same. The dry are going in with the rest in second step so it changes nothing.

    2. You could use oil to avoid the extra step, but it wouldn’t taste as good. You could also melt the butter in your mug first, thus skipping another thing to wash.

    1. Beanthejane, there isn’t any oil in this recipe, so I’m assuming you’re talking about the melted butter? It sounds like you either used too much butter or didn’t stir it in well enough. Or maybe your microwave is a lower wattage and needed more cook time. I would urge you to try this recipe again, exactly as worded. Maybe purchase some reading glasses to make sure you get all the amounts correct, they sell them super cheap at dollar stores! Good luck!

    Great recipe! Worked very well and was easy to follow. The batter was very sweet at first but was less sweet after it was baked so maybe add more if you prefer sweeter. I added cinnamon sugar on top of mine!

    Very Yummy Cake. I made this in a 9 oz paper cup with just a regular spoon and eyeballed the measurement of ingredients. 60 seconds then another 10. It was a bit spongy but very full of vanilla flavor and I had no sprinkles so dusted it with confectioners sugar after dumping it out on a plate. Thank you! FIVE STARS!

    This recipe is terrible, I went into my kitchen to make something and looked up mug cakes and I have seen this one I followed all the directions and I put it in the microwave for 70 seconds and it was still liquidy so I did 10 more seconds and it was not don’t so I did one more 10 seconds and it exploded in my microwave, so I made another one and kept adding 10 seconds but this time I watched the microwave and it burned. So if your looking for a yummy treat this is NOT a smart choice. Hopefully, you are reading the comments beforehand if not I’m very sorry.

    What sized mug do you use? I find that the mugs I like for coffee are too large, and the standard ubiquitous printed ceramic mugs don’t heat right for microwave cakes.

    Ive been searching for a good vanilla mug cake FOREVER. Ive now made this one so many times, its the perfect portion size and tastes great. I will say, the order of which ingredients go into the mug is a bit odd. I make it by melting the butter first, then adding the rest of the wet ingredients and finally, the dry ingredients.     I used to make mug cakes all the time, but had forgotten the recipes. Having some left over ingredients from holiday baking and a hankering for a treat I did a quick search. I whipped this up quickly and it turned out lovely. I read the reviews first and realized I might need to punch it up flavor wise. That’s it course personal preference. What I ended up with was a vanilla spice cake using some pie spice I had tucked away from thanksgiving. What a lovely treat to have without feeling guilty about overindulgence. Get creative as this is a base cake. You could add all kinds of things and if it doesn’t turn out, no big deal.

    This has a great flavor, easy recipe, but what does the inside look like when cooked? I added extra time a few times, but its not changing it. It looks transparent in some places, not like an oven cake does. Is this undercooked, or the result of the real butter or almond milk? I can sort of “pack it”, it is so moist, yet its crumbly.       I just made this cake. Mine didn’t look transparent to me. The top wasn’t flat like you’d expect with an oven baked cake. Maybe the unevenness of the top is making you second guess the doneness of the cake? Upon first glance I didn’t think mine was done either. The absence of eggs also had this cake lighter in color than I expected so that could also make you think it’s not done. I think the toothpick test should relieve your worries about the cake being done if you’re unsure.

      I cooked mine in an oversized mug for 90 seconds. I checked for doneness with a toothpick and it came out clean. I then let it sit for 1 min in the microwave as suggested before removing it from the mug. I decided to take it out the mug because , like you, I wanted to make sure it was done before consuming it. I didn’t want any surprises. LOL

        Erica, Hi again, I tried again today and after your comments, plus watching the video and looking at the photos, I cooked mine longer. I have a small microwave, so I did 110 seconds, waited a minute and it wasn’t quite set. Then 20 more seconds, 1 min of stand time, and i see the difference this time; it pulled away from the sides and the top looked just like the photo. Delicious! It worked better to just cook it longer and not mess around with it!! Very light and delicious.

    this cake is A-MA_ZING! i baked it at 12 am (bc of cravings) and its really fluffy and light and yummy. the only suggestions i would have is to add a little bit more flour and sugar. i had it with peanut butter frosting (it wasnt really frosting bc i couldnt start up the electric mixer at 12AM) and i would definitely try again

  299. Let me just say… the batter before you microwave it is SO GOOD ( I may have had a small test taste oops). I microwaved mine for 80 seconds, was pretty good although a little spongy. I recommend 70 seconds first and then reevaluate. Having said that, it could be because I forgot to mix the dry ingredients before adding the butter. All in all, good recipe! Thanks!

    When I made this mug cake, I used unsweetened soy milk. It was so good! After I finished eating it, I had to make another; it was that good. I added frosting on top (2tbs butter softened, 3tbs powdered sugar, 1tsp of milk). The 1 minute and 10 seconds was the perfect amount of time in the microwave. I have never had a better mug cake.

    This is so good! I added cinnamon instead of sprinkles and used almond milk, and it tasted so great! The batter is delicious, and I had to force myself to cook it and not eat it raw.

    I did a vegan version of this, and it was absolutely delicious . It took all of five minutes and tasted just perfect. I highly recommend this for any one who wants a quick, delicious dessert.

      Made this tonight & it was better than expected. Followed recipe exactly & it was good. Just added about 20 seconds more in reference to time. While letting them sit, made a quick frosting, because I don’t keep sprinkles. Will make again.

    So this was my 1st ever mug cake attempt! It tastes like a Christmas sugar cookie! Wow! I am impressed… only thing I didn’t have was rainbow sprinkles, so I used chocolate sprinkles. Otherwise, I used 1 Tbl heavy cream and 2 Tbl 1% milk. Thanks for a great maiden voyage into mug cakery! Woohoo!

  314. So first up I tried this recipe without sprinkles (because they’re disgusting!) and it came out airy and a little puffed up. Not a lot of flavor I must say so I added cinnamon, mayo (for moistness) nutmeg and diced apples! Delicious! Laura you should make an apple pie mug cake using that recipe! I know don’t thank me!     I mean yea it’s vanilla cake I don’t really know what else to say about it. Its good cake its just not really anything special about it but I guess that’s kind of the point.
    If you’d want you could add cardamom, coconut flakes and some other spices so it’s not so plain

    Best one so far! Thank you. Surpassed my expectations. The only mug cake that doesn’t have cocoa or nutella and tastes great. Didn’t think it could be this good especially without even one egg but exceeded in that department too. Not rubbery and flubbery like a lot of other mic mug cakes. Warm, soft, comforting and sweet. Perfect when craving something quick and sweet in the middle of the night 🙂

    Disclaimer: Due to dietary restrictions, I had to swap AP flour for Whole Wheat pastry flour, and small crystal raw sugar for white granulated. If you use whole wheat flour, you’ll have to add a bit more because the bran of WW takes up space in the measuring utensil, which decreases the gluten content in an equal measure. Since gluten acts in rising the batter while cooking, you need to make sure you add enough additional flour to get the necessary amount of gluten to make a good rise. Otherwise you’ll end up with a sunken, stiff cake. So I used 1/4c + 1Tbsp of WW pastry flour. The small crystal raw sugar is the opposite. It’s much sweeter than granulated, so I started with just 1Tbsp. As I mixed the batter, it wasn’t the right consistency, so I added 1tsp, and that corrected it. I also divided the milk, first adding 2Tbsp, mixing thoroughly to get the lumps out, and then finished with the last 1Tbsp and continuing to mix until it was the right consistency. I used almond milk, which in my experience gives results quite similar to cow’s milk. Another swap was an equal measure of vegetable oil for butter. (Other good oils are sunflower or canola). This cake did not disappoint. It’s true that mug cakes with egg in the batter makes it fluffier and spongier, with a lighter texture, but I was specifically looking for an eggless recipe tonight because I’ve been on a mug cake kick, and I don’t want to burn through my eggs making single-serving cakes. This will be my go-to recipe as long as my mug cake kick lasts.

    I just tried this simple mug cake recipe (without the sprinkles) because of a late-night craving for sweets and it was delicious! I wanted to top it with fresh strawberries and whipped cream , but the cake got gobbled up before I could reach them!
