Just like so many of my other favorite Air Fryer recipes, these Air Fryer Potato Wedges result in a perfect crispy exterior, without the mess (or calories) from frying them in oil. They’re easy to make and pair with any meal. Check out my air fryer tips and tricks!
How to make Potato Wedges in the Air Fryer:
Prep Potatoes: Scrub and rinse potatoes, then thoroughly pat dry. Cut each potato in half then cut each half into 4-6 wedges, evenly sized.
Soak Wedges: Place potatoes in a bowl and cover with boiling water. Allow to soak for 10-30 minutes. This removes some of the potato starch, making them crispier when cooked.
Season: Whisk together olive oil, garlic powder, paprika, salt and pepper. Drizzle over potatoes and toss to combine.
Air Fry: Spray air fryer basket with cooking spray and add enough potatoes that you can spread them apart without touching (you may need to cook them in batches). Sprinkle with parmesan cheese. Cook for 10-15 minutes, opening the basket every 5 minutes to give them a shake/toss, until tender and crispy.
Serve with dipping sauces, like ketchup, Ranch or BBQ Sauce.
Store leftover wedges in an airtight container in the refrigerator. Reheat in the air fryer at 400 degrees, until hot and crispy.

Why do you soak the potatoes in water before air frying?
Soaking the wedges in water is a crucial step to achieve that crispy texture. As the potatoes soak, it draws the starch out of the potato. Just make sure to pat the potatoes completely dry before seasoning.
Which potatoes are best for wedges?
Russet potatoes work the very best for potato wedges and will give you the crispiest result. Waxy potatoes (like red or fingerling potatoes) don’t work well for potato wedges.
Make Ahead and Freezing Instructions:
To Make Ahead: The potatoes can be soaked in cold water, stored in the fridge overnight, before seasoning and cooking.
To Freeze: store in an airtight freezer bag and freeze for up to 3 months. Reheat in the air fryer at 400 degrees, until hot and crispy.

- 2 Russet potatoes , unpeeled, scrubbed and rinsed (about 2 – 2 ½ lbs), then cut into wedges
- 2 Tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
